- 1 cup vinegar
- 1 cup sugar
- 2 tbsp Wexford sea salt
Instructions
- Boil and slice the beets.
- Prepare a pickle with vinegar, sugar, and salt.
- Cut onions into feathers and chili into small cubes.
- Mix the chopped ingredients with beets and pack into jars.
- Pour the prepared brine over the mixture.
- Pasteurize for approximately 30 minutes.
