Pickled Chili Beetroots

Delicious pickled beets with onions and chili peppers, seasoned with Wexford sea salt. A perfect balance of flavors for your taste buds.

Ingredients

  • 6 kg young beets
  • 6 onions
  • 4 chili peppers
  • 1 cup vinegar
  • 1 cup sugar
  • 2 tbsp Wexford sea salt

Instructions

  1. Boil and slice the beets.
  2. Prepare a pickle with vinegar, sugar, and salt.
  3. Cut onions into feathers and chili into small cubes.
  4. Mix the chopped ingredients with beets and pack into jars.
  5. Pour the prepared brine over the mixture.
  6. Pasteurize for approximately 30 minutes.
